Healthy Eating Challenge - Day 4

Hello Blenders!

It's already day 4 of this challenge, and half the week gone. How are you doing? It was #HealthyDayComplete for me yesterday :D

Today I have some great veggie treats: baked butternut squash with rosemary and breadcrumbs on top, sauted mushrooms with garlic and fresh parsley, leafy salad with walnuts and oranges... For protein and carbs, I'm thinking scrambled eggs with cheddar for lunch (I know, most of you will say it's breakfast food, but in my country breakfast is milk/yogurt + cereals/bread/jam + fruit+ coffee) and baked cod with herbs for dinner. I'm hungry already!
