Made an Indianish dish tonight for dinner. Made the DIY "curry" powder on the Minimalist Baker webaite and added a lil more of the spices I like, and sauteed it with leftovers in my fridge that needed to be used - roasted parsnips and winter squash, kidney beans, a piece of tofu, a big broccoli stem, onion, garlic, and a couple of handfuls of kale. Served over rice.

Nothing like my mom's incredible food, but easy and delicious for a quick weeknight dinner. 😊
