Hey FB Family! My husband and I have this recipe for Almond Chicken nuggets that we love and I wanted to share it. It's super healthy and DELICIOUS. Here's the recipe (measurements for 2):
1 and a half cups sliced almonds
2 medium or one large boneless chicken breasts (you want about 16 decently-sized nuggets)
1/4 tsp cayenne pepper
1/2 tsp paprika
1/2 tsp pepper
1 - 3 tsp of garlic powder
1. Preheat the oven to 425 degrees F. Blend the almonds with the seasonings in a food processor until the almonds are finely chopped, but not almond dust. Trim the fat from your chicken and cut into nuggets.
2. Lightly beat your egg in a bowl and either using your fingers or tongs, dip the chicken pieces in the egg and then roll in the almonds until fully coated. Place on a baking sheet lined with foil and lightly sprayed with oil.
3. Bake nuggets in oven for 20 min to 25 min. You will know they are done when the almond "breading" is a deep golden brown. We usually are able to cook them in 20 minutes. Serve with your veggies of choice! :)
