Beets!

#chefinthemaking never met a recipe that she didn’t want to try to change in some way, often “in the moment” (which is one of the reasons she won’t write things down, so I can share).

Anyway, this beet salad is no different.

Not sure where she found the original recipe (she riffs off of a beet and goat cheese recipe she found somewhere long ago), but this one has beets, candied (spicy) walnuts, lime, whipped Roquefort Papillon cheese, and garnished with mint.

It was, as they say in Russian, “очень не плохо” (“very not bad”). Okay, it was actually much better than that...trust me.
