Turkey, Spinach, and Artichoke Oven-Pressed Paninis

Now you can have a restaurant-quality panini at home, with or without a panini press. This oven-pressed panini is ‘smooshed’ (or, sandwiched) between two baking sheets using a heavy duty, oven-safe pan (we love using one of our cast iron skillets) as weight. While the sandwich bakes, the ingredients compress and commingle, making every bite that much more flavorful. The ingredients? Well…sliced roasted turkey breast (awesome use of leftovers), spinach, thinly-sliced red onion, marinated artichoke hearts, mozzarella, and feta.

Vegetarian or Vegan Modifications
For a more veggie-centric sandwich, feel free to substitute portobello mushrooms for the roast turkey in this recipe. For a vegan panini, substitute the mozzarella and feta with your favorite vegan alternatives.
