Our homemade Mango Peanut Sauce is made by combining peanut butter, soy sauce, garlic, ginger, mango, dates, and a little bit of broth, blended together until rich and creamy. This sauce really marries the pad thai ingredients together: tofu, carrots, red bell pepper, broccoli, and whole wheat noodles. The final sprinkling of cilantro, scallions, and peanuts put that final touch to this iconic recipe. To really enhance the Thai influence, feel free to spice up your sauce or pad thai with a little garlic chili paste or sambal.
