Round out your lunch or dinner entrees with the addition of this side salad! Fresh spinach, cherry tomatoes, and canned chickpeas are drizzled with a simple dressing of balsamic vinegar, olive oil, and Dijon mustard. We love serving this salad alongside any sandwich or wrap for a well balanced lunch, especially our Mushroom French Dip. Or, use this side salad to round out main entrees that may need a little vegetable or protein boost, like pasta dishes.  

Hacking this Recipe 

If you need to boost your veggie quota for the day, feel free to add in any additional ingredients to this salad. Roasted or raw mushrooms, broccoli, carrots, zucchini, etc. are all lovely additions.
