With it’s attractive display of vivid colors, this Spinach and Mandarin Orange Salad will please both your tastebuds and your eyes. It is easy and quick to throw together and makes for an excellent side or main dish.

The darker the greens, the more health benefits they offer. The spinach in this recipe is high in iron, fiber, and antioxidants. Popeye knew what he was up to; spinach is nothing short of a superfood that may play a role in helping prevent cancer, heart disease, and other conditions related to aging and poor nutrition. It is best when eaten raw, as it loses much of it’s nutritional value when cooked.

The tangy little oranges in this dish add a fun kick of flavor and color. The feta cheese and walnuts provide a healthy amount of fat, which will help slow your digestion and keep you feeling full for longer (a real plus if you are watching your weight).


Ingredients
8 Cups Spinach (Roughly 10 ounces)
1 Cup Feta Cheese, crumbled
8 Ounces Mushrooms, freshly sliced
3 Cups fresh, sectioned mandarins, or 22 Ounces Mandarin Oranges, drained (make sure to only use oranges that contain their natural juices; no sugary syrups!)
3 Tbsp Walnuts, diced
Low fat Raspberry Vinaigrette dressing; 2 Tablespoons to be drizzled lightly on each salad

Divide the spinach and mushrooms onto 4 plates. Next, portion the mandarin oranges out onto the plates of spinach. Crumble feta cheese onto the tops of the mandarin salad before sprinkling the chopped walnuts over the finished salad. Drizzle the low fat raspberry vinaigrette over the tops of each just before serving.
