This creamy coleslaw recipe is more nutritionally balanced than the traditional mayo-based slaw, substituting instead with low fat Greek yogurt. Adding to the yogurt base is a tangy and savory combination of Dijon mustard, apple cider vinegar, and honey, providing tasty balance. A little chopped scallion is added to the store-bought coleslaw mix, enhancing the overall flavor of this side dish. If store-bought coleslaw mix (typically found in the produce section) is not available at your local grocer, feel free to use a combination of shredded cabbage (green and purple) and grated carrots to substitute. 

Vegan Modifications

Vegan dairy-free yogurt or vegan mayonnaise can be substituted for the Greek yogurt in this recipe. The honey can also be substituted with agave.
