Having scampi anything is cause for celebration. There is just something about fresh garlic and lemon...it's so delicious! The ultimate culinary match. The salmon in this recipe is lightly seasoned and pan-seared — very simple. The garlic and lemon combination are added to the pan along with halved cherry tomatoes. When sautéed, these ingredients create a fragrant and tangy sauce.

Extra virgin olive oil mashed potatoes are created using a little culinary magic. We swapped the traditional mashed potato ingredients with items that are much more nutritionally balanced: olive oil, broth, and yogurt (as opposed to butter and cream). Our mashed potatoes are just as tasty and creamy!

Hacking this Recipe 

If you are looking for some time-saving steps, feel free to make the mashed potatoes ahead of time (just a day or 2 in advance), and store in a covered container in the refrigerator. Simply reheat the mash in the microwave or on the stovetop before serving.
