Mexi Mason Jar Dip with Whole Grain Tortilla Chips

The Dish 

The iconic layer dip gets a makeover. Our version boosts the veggies and replaces the refried beans with a healthier black bean spread. Portioning the dip into mason jars makes this a great packed snack as well as giving greater control over the serving size. 

Many of the components can be prepped ahead of time, including the black bean spread, avocado spread, and seasoned sour cream. When you’re ready to assemble, simply fill your jars. 

Vegan and vegetarian modifications can easily be plugged in. Substitute vegan sour cream or cream cheese for the traditional sour cream. Use a vegan cheese or vegan shredded cheese for the cheddar. 

Ingredients

Black Bean Spread 

1 1/4 cup (180g) canned black beans, drained and rinsed 
2 teaspoons (10ml) chipotle peppers in adobo or chipotle pepper hot sauce 
1/2 teaspoon (1g) garlic, peeled and chopped 

Seasoned Avocado Spread 

1 each avocado, peeled and seed removed  
1 teaspoon (5ml) lime juice 
1/2 teaspoon (2g) salt

Seasoned Sour Cream 

1/2 cup (118ml) low fat sour cream
2 teaspoons (3g) taco seasoning  

Dip

1/4 cup (25g) shredded cheddar cheese or Mexican cheese blend 
1 each (125g) tomato, chopped
1/2 cup (70g) red onion, peeled and chopped 
1/8 cup (20g) jalapeños, chopped (optional)
1/4 cup (7g) fresh cilantro, chopped 
1/4 cup (20g) black olives, sliced   

Preparation 

  • Pulse black beans, chipotle peppers, and garlic in a food processor until combined and slightly chunky. 
  • In a medium bowl whisk together sour cream and taco seasoning until blended. 
  • In a medium bowl mash avocado with lime juice and salt until blended. 
  • Evenly divide black bean spread to the 4 jars and spread, covering the bottom. 
  • Evenly divide avocado spread to the 4 jars and spread, cover the black beans. 
  • Evenly divide seasoned sour cream to the 4 jars and spread, covering the avocado. 
  • Finish layering the jars by filling each with cheese, tomatoes, red onion, jalapeños, cilantro and olives. 
     
  • Serve with whole grain tortilla chips. 

Vegan Modifications: Substitute the sour cream with a vegan cream cheese. Let the cream cheese soften to room temperature before seasoning and spreading. 

Omnivore Modifications: Add your favorite ground meat.
