This is a flavorful lunch option for those looking to boost their vegetable and protein intake. Kidney beans are one of the healthiest types of legumes to use as a source of protein and fiber. Their consistency is surprisingly creamy with a mild flavor, making kidney beans a wonderful option for homemade hummus. In addition to the hummus, we also fill this wrap with hard-boiled eggs — made into a quick egg salad — as well as oodles of fresh vegetables. We love the crisp texture provided by the cucumbers and bell peppers, as well as the flavor-enhancing properties of the fresh red onion and tomatoes. 

Prepping Ahead/Time-Saving Tips

The kidney bean hummus can be made a day or two in advance, placed in a sealable container, and refrigerated until ready to use.
