These easy peasy salmon patties will soon become your new favorite meal. Salmon, brown rice, egg whites, chopped scallions, and lemon pepper seasoning are all that is needed to make them! The brown rice and egg whites act as a binder, holding the salmon patties together, while the scallions and lemon pepper seasoning enhance the flavor. The lemon pepper seasoning in the patties pairs exceptionally well with the homemade tzatziki sauce topping. Rounding out the nutritional balance of this dish is our zucchini and tomato side. It's a simple veggie roast seasoned with a little vinegar, honey, and mustard.

You can make the tzatziki sauce a day ahead of time using our homemade tzatziki sauce recipe. We also use precooked rice in this recipe; this really cuts down on the overall cooking time as well as day-of prep. On average, 1 egg white equals 1oz or roughly 30g (averaging about 1 egg white per person for this recipe).
