Instead of the traditional corn tortillas used in making nachos, we opted for a more nutritious approach…bell peppers. When cut from the top down (avoiding the seed-filled center), bell peppers make these handy little boat-shaped pieces. These little bell pepper boats are an ideal base for nacho fillings. As for our meaty nacho filling, we encourage this leaner, taco seasoned, ground turkey alternative to the traditional ground beef or chili nacho filling. A very tasty (and better for you) option. A quick and easy salsa is prepared while the nachos are baking. A combination of fresh ingredients to provide that restaurant-quality flavor and appearance.
Vegetarian and Vegan Modifications: Vegan crumble or plant-based alternative ground meat will work very well as a substitution for the ground turkey in this recipe. Feel free to use your favorite vegan cheddar shreds in place of the cheese in this recipe.
