This super simple side salad combines the rich, savory flavors of traditional, yogurt-based, curry sauce with fork-tender sweet potatoes. Our homemade curry sauce is a traditional combination of garlic, ginger, spices, and yogurt, livened up with a hint of lemon juice and maple syrup. This recipe makes plenty of sauce to use throughout the week for traditional saucy applications, marinades, or as a dressing for tasty side salads. A little fresh chopped cilantro adds an herbaceous pop. 3 ingredients are prepared in under 5 minutes — it doesn’t get much easier than that! 

Hacking this Recipe 

We love keeping some cooked sweet potato on-hand. It is a great add-in for hearty entree sides. Some grocers carry cooked and cubed sweet potato in the freezer section. If not, peel and cube fresh sweet potato and steam until just tender (typically 10-12 minutes, depending on how much sweet potato you are cooking). Cool the cooked sweet potatoes and keep them in the refrigerator until ready to use.
