Overview

This is an even-healthier version of the High Fiber Scottish Oat Muffins recipe found on the back of Bob’s Red Mill organic high fiber hot cereal mix. There is very little of anything refined that goes into this deliciously modified, all-natural bran muffins recipe.

What takes a recipe from moderately healthy to a nutritional powerhouse? Here’s what this recipe has over others:
• This bran based recipe has no flour; we cut out all of the flour and instead doubled the amount of high fiber flaxseed, whole grain oats, oat bran and wheat germ (Bob’s Red Mill mix; read more below). The surprising result is a delectably soft muffin consistency that’s extra high in fiber and low in empty calories.
• This is a predominantly sugar free muffin (free of refined sugars, anyway); we eliminated the refined sugar and instead used pure honey to make it sweeter naturally.
• The shredded carrots add fiber, a good amount of vitamin A, and a bit of natural sweetness.
• The fat comes from healthy sources; whole grains, and oils that are high in Omega-3 fatty acids, and free of trans fat.

Ingredients
1 ½ Cup Bob’s Red Mill Whole Grain, High Fiber Cereal
½ Cup Pure Honey
1 Egg
½ Cup Plain, All Natural Yogurt
1 Banana, mashed
¾ Cup Carrots, shredded
2 Tbsp Vegetable Oil
1 ½ Tsp Cinnamon (or more, if you’re a big fan of cinnamon)
1 Tsp Baking Powder
½ Tsp Baking Soda
½ Tsp Vanilla

Add all of the dry ingredients together in one bowl, and the remaining ingredients and mashed banana in another; mix both well. Combine the dry and moist ingredients in one large bowl and mix them with a large spoon or spatula until they are well blended. Add in the shredded carrots and stir until they are evenly distributed.

Line a muffin pan with either muffin/cupcake cups or a very light layer of grease. Spoon the mix into the tins and cook them at 400° for roughly 18-22 minutes.

There are many variations on this recipe that can change it’s flavor and nutritional content. For example, if you want a heartier, and even more filling end result, you can add chopped almonds or walnuts to the recipe.

This particular bran muffins recipe uses Bob's Red Mill Organic High Fiber Hot Cereal mix as it’s main ingredient. It’s a combo of whole grain oats, flaxseed meal, wheat bran, wheat germ, and oat bran (all organic). It is free of additives, a great source of fiber, and offers 1000 mg of omega-3 per serving. You can find their product in most grocery stores, typically near the bulk or health food section.
