Loaded with eggs, turkey sausage, and cheddar cheese, you’ll have these quick and easy baked taquitos (little tacos) ready in under 30 minutes! Whole wheat tortillas are filled with a hearty scramble of turkey sausage and eggs, and seasoned with ground cumin. Once stuffed, the tortillas are rolled into tight cylinders and baked crisp. After the taquitos have been baked, we recommend topping them with your favorite pico de gallo or salsa for an absolutely delicious way to start your day.   

Hacking This Recipe 

Feel free to substitute the eggs, turkey sausage, and cheddar cheese in this recipe with your favorite vegan alternatives. We love to use scrambled tofu and alternative-meat breakfast sausage for our vegan versions. The sour cream can also be substituted for a vegan variation or eliminated from this recipe all together.
